Wine Selection & Evalution Level 3

Course Objectives

Upon completion of the course, candidates will be able to:

Describe the principles of wine production processes; vinification and viticulture.

Describe the different types of grapes, their anatomy and the importance of growing environments.

Evaluate the flavours and characteristics of wines based on their production processes of vinification and viticulture.

Describe the techniques of wine tasting and formal wine tasting notes.

Explain information on the types, flavours and characteristics of sparkling, still and fortified wines.

Evaluate wine vintage and provenance based on sensory analyses.

Course Content

1. Wine production and its influences on flavour.

2. Evaluate the flavours and characteristics of wines.

3. Information on sparkling, still and fortified wines.

4. Sensory analyses of wine vintage and provenance.

5. Recommend a wide range of wine selection.

Entry Requirements

‘N’ level/’O’ level qualification and above

Able to read and write English at a proficiency level equivalent to the ES WSQ WPL level 5/’N’ level.

Teacher to Student Ratio

To ensure that all students have sufficient time to learn and practice their skills, we have allocated 1 teacher per 15 students maximum. (1:15)

Duration

The duration of this course will be held for 114.75 Hours (2 days)

Classroom Facilitated Training Duration – 6 hours Practical Duration – 8 hours Assessment Duration – 45 minutes

Delivery Method and Assessment

Training delivery is a combination of lectures, case study,group discussion and self-reflection.

Assessment consists of practical performance and oral questioning.

Certification

Upon successful completion of the programme, candidate will be awarded with WSQ Statement of Attainment (SOA) in Wine Service Level 3 by SkillsFuture Singapore (SSG)

Absentee Payroll Funding

For training conducted outside working hours, AP funding is given to the employers to defray the overtime pay that was paid to their employees. Hence to qualify for AP funding, employers must have in place a Human Resource (HR) policy which provides for the payment of overtime pay to employees for these training hours and pay their employees overtime pay for these hours, in accordance with the HR policy.
